 Bread Dipping Oil

Bread Dipping oil Ingredients:
  • 1/2 cup extra virgin olive oil
  • 1/4 cup finely chopped black olives
  • 2 cloves garlic, minced 
  • 1 tablespoon Greek Seasoning - ChefStuart.com
  • 1 teaspoon crushed red pepper flakes
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons Grated Parmesan
Instructions:
On a plate, combine the olive oil, chopped olives, minced garlic, seasoning, red pepper flakes, and black pepper.
Add the balsamic vinegar, parmesan and mix everything well.
Let the mixture sit for at least 10-15 minutes to allow the flavors to meld together.
Serve with warm, crusty bread and enjoy!

Why wouldn’t you pair grape-based Lillet Rose with Champagne? This cocktail takes two seconds and is guaranteed to impress at your next brunch or afternoon garden party.

Instructions: In a coupe, combine 1 1/2 ounces of Lillet Rose and 3 ounces of Champagne. Give a quick stir and garnish with a lemon peel, twisting over the surface of the glass to spray its citrus oils; then discard that peel and garnish with an orange half-moon.

 Bacon and Spinach Breakfast Quiche with a Potato Crust

I love quiche recipes.  This is a new one for me to try.
I found this one on Facebook from Bobby Parrish 

Ingredients:
1.5 lb small potatoes
Salt & Pepper
6 strips bacon
1 small onion, diced
3 cloves garlic, finely chopped
8-10 oz frozen spinach (thawed and liquid squeezed out)
6 eggs 
1/2 cup whole milk
Parmesan, grated finely

Directions:
Preheat oven to 350F. 
Add the potatoes to a pot of boiling water and add a generous pinch of salt. Let it cook for 10-12 minutes. Then take a spring form pan, line the bottom with parchment paper, and drizzle some olive oil on the bottom then spread that around. Take the potatoes and dump them into the pan. Then take a small cup and gently press down on the potatoes to smash them. Creating one even layer of potatoes all around the bottom and about 1-1.5 inches up the side forming a ‘crust’. 
Drizzle some olive oil over top, add some salt and pepper, then put it in the oven to crisp up for 15 minutes. 
Next chop the bacon and add it to a lightly oiled ceramic pan on medium heat. Slow cook it until it’s cooked through, then remove it from the pan, saving about 2 tablespoons of the bacon fat in the pan. 
Dice the onion and finely chop the garlic cloves, then add that to the ceramic pan with the bacon grease, add a pinch of salt and cook it for about 6 minutes. When it has a nice golden color, add the thawed and drained spinach then add another pinch of salt and cook it for another 2 minutes or until the spinach is warmed through. Remove from heat and set aside. 
In a medium bowl, crack in the eggs, add the milk, and grate over some Parmesan (as much as you like), whisk to combine, then add in the bacon, onions, garlic, and spinach and give it another whisk up. 
Pour the egg mixture into the potato crust, and bake it in the oven for about 30 minutes or until the center is set and not jiggly. 
Let it cool for about 5 minutes before you run a knife around the edge and release the spring form. 
Slice in to cut your perfect piece and enjoy!

Break Cake

My mom made this. It was delicious. Below is a picture of the recipe in her hand. I made it today, November 3rd in her honor. I have added a few more details.

Step 1: Activate the yeast. Scald 2 cups of milk with 1/2 cup butter. Then let the milk cool to between 100 - 110 degrees F. I pour it into another bowl.

Step 2: While the milk is cooling, assemble the other ingredients.

  • Measure 5 cups of flour in a large bowl. Add 1/2 cup granulated sugar and 1 t. salt and mix together.
  • Combine the sugar, cinnamon and nut mixture.
    • Chop 1 cup nuts
    • Add 1/2 cup granulated sugar
    • Add 1 t. cinnamon
  • Beat the eggs
    • 5 whole eggs
    • 3 egg whites
  • Grease the bundt or angel food cake pan.
Step 3: Once the milk has cooled, add 2 T granulated sugar and 2 packages of yeast. Mix this together and let sit for 10 - 15 minutes. The mixture will rise to the top.

Step 4: Add the eggs, flour, sugar and salt mixture and mix well together. You may need to add more flour if the mixture is too soupy.

Step 5: Let rise for 1 - 2 hours. Cover with a towel and place in a warm area. The dough will double in size.

Step 6: Take the dough out of the bowl and place on a floured surface.  It will be rather sticky. Cut into strips and then small squares. Melt a stick of butter and roll the squared in butter. Place the dough squares in a greased bundt pan. Sprinkle each layer with the cinnamon, sugar and nut mixture.  I like to also add shredded apple, I used 2 apples. Continue layering until the pan is 2/3 full. The dough will continue to rise when baking.

Bake at 375 degrees F. for 45 - 60 minutes

Thanksgiving 2024

Thanksgiving 2024 - Cabin


To make or do ahead:
  • 6 - 7 weeks before Thanksgiving 
    • order Turkey from Borderland Specialty Meats, Foods & Smokehouse. NOTE: tell them you want the gizzards to use to make a stock for the gravy.  Note: the neck will be inside the turkey. They will also brine and season the turkey!!!!! Fabulous! Buy 3 pie pumpkins
    • Begin looking for fresh chestnuts. Tis year I purchased them from Golden Harvest in Rhinelander.
  • 1 week prior. 
    • The bread for the stuffing is critical, buy good homemade bread or make your own.  
    • Buy 3 different apple varieties from Pleasant View Orchard & Bakery. I use these for apple sauce for meals before Thanksgiving. There are also apples in the dressing and the sweet potato recipe. 
    • Roast the pumpkin(s) Use extra pumpkin puree to make pumpkin soup, and pumpkin chocolate chip muffins as well as pumpkin hummus.
  • Turkey or chicken stock. You will need this for the dressing and the gravy. I plan to try this recipe. Roasted Turkey Stock. This recipe is fantastic!!!
  • The Cranberry Salsa and Cranberry Compote can also be made ahead. While you are at it, make this as well. Cranberry Barbeque Sauce. The link will take you to 2 fun things to do with left over turkey.
  • NOTE: the dressing is VERY time consuming.
  • 2 days prior, make the pie crusts. You will need 4
  • One day before: make the pies. Don't wait. You will not have time on Thanksgiving morning.
  • Wednesday evening. Chop the vegetables and preparing the bread for the dressing

Appetizers Options. 
This year I only made the pumpkin hummus with vegetables. Pat brought an artichoke dip. I had cheese and beef sticks from Borderland. I also had warm ciabatta bread.
Dressing
Cranberry, Sausage and Apple Stuffing. This year I purchased chestnuts from Golden Harvest in Rhinelander. I followed this recipe for roasting the chestnuts and then ground them. This was by far THE best dressing I have EVER made!!!! My mom always added chestnuts to her dressing, now I know why!

Cranberries (Yes, 3 kinds of cranberries)
Potatoes
Gravy - 
John usually makes the gravy but just in case. Here is a recipe. I don't plan to make this ahead. I like to use the drippings from the turkey. My Mom also made a stock using the giblets from the turkey.
Make-Ahead Gravy NOTE: John added sliced fresh mushrooms, sliced onion and the can of cream of mushroom soup to the bottom of the roasting pan 1 hour into cooking.  I also added about 2 cups of red wine. We used 4 cups of the turkey stock thickened with cornstarch which was then added to the pan drippings plus. John's gravy was to die for.

Rolls/Biscuits - I discovered that many people like rolls or biscuits with dinner. I thought I would try this recipe. Sweet Potato Biscuits. or this one Quick and Easy Yeast Rolls. John provided the rolls this year.

Vegetable I struggle with this one. 

Dessert
  • Pumpkin pie with  whipped cream. I am going to try this recipe. The Ultimate Pumpkin Pie from New York Cooking. I actually used my regular recipe but adjusted the spices and added 1 Tablespoon rum.
  • Apple pie
  • John provided the ice cream and whipped toppings.

Fall Sheet Pan Soup

 Fall Sheet Pan Soup

I found this recipe on Instagram from Crowded Kitchen, 10/2/2024

INGREDIENTS

  • 4 cups diced butternut squash
  • 5 large carrots
  • 1 1/2 cups peeled and diced apple
  • 1/2 of a yellow onion cut into wedges
  • 1 small head of garlic
  • 2 T olive oil
  • 1 1/2 t. salt
  • 1/2 t. black pepper
  • 1/4 t. ginger
  • 1/2 t. cinnamon
  • 1/2 t. tumeric
  • 1 t. paprika
  • 3 cups broth (chicken or vegetable) heated
  • 3T lemon juice
  • 1 T maple syrup

DIRECTIONS

Preheat oven to 400 F
Slice the top off the head of garlic.
Place the squash, carrots, onion, apple and garlic on a sheet pan. Drizzle with olive oil, then sprinkle with seasonings and gently toss.
Roast 40 - 50 minutes until veggies are fork tender and lightly browned.
Remove the veggies from the oven and add to blender (squeeze out the garlic) then add in the heated broth, lemon juice and maple syrup and blend until smooth.

I like to serve this with basil pesto on top. I also think it would also be good with blue cheese crumbles.
The recipe calls for making grilled cheese crouton.  This was very good as well

Grilled Cheese
2 slices sourdough bread
butter
3 slices smoked or regular Cheddar cheese
2T bacon & onion jam (I used fig jam)
Make this like a grilled cheese sandwich and then cut into cubes to top the soup
