Summer Cookout Menu - June 2024

 The Dailey family gathered at the cabin to spend time together with California relatives Judy and Danny Kaminski. We were joined by our amazing neighbor Tom Pecht and by Epsom tour golfer Kathleen Scavo and her caddie Dan.

The star of the show was the barbeque chicken.  Sadly I did not make notes on this. 
I am now trying to recreate.

This time I think I will make a Fresh Corn Salad

Summer Dinner at the Cabin with the Dailey Family

 Menu

Appetizers with a variety of different summer wines (Vinho Verde, Sauvignon Blanc, Chardonnay, Mamertino - Chardonnay and Soave blend)

Side dishes:

  • Cold Melon Soup
  • Baked beans - serve warm
  • No mayo coleslaw
  • Baked potato

Summer Lunch with Karen Barr

 I used Jacques Pepin's cookbook "Heart & Soul in the Kitchen" and prepared the following recipes:

  • Tuna Mascarpone Cream with rice crackers, black olives and carrot sticks.

  • Broccoli Soup

  • Tabbouleh

  • Shrimp salad (not from the cookbook)

  • White peaches with Grand Marnier
I served this with a wonderful wine from 2 Lads Winery, Old Mission Peninsula, Traverse City, MI, USA - 2019 Sparkling Pinot Grigio

Puzzling with friends: food, wine and friendship

Tackling a puzzle right after the holidays has become a tradition.  This year it has become a marathon. Claire gave me a 2000 piece puzzle for my birthday.  The puzzle is of Cinque Terre a future destination and one that my friend and fellow puzzler, Diane, has already visited.

Below is our puzzling journey which of course includes food and wine.  Mike speculates that the wine has been slowing our puzzling progress.

January 2, 2017
We started with an amazing champagne given to me by Debbie, Veuve Clicquot Brut Yellow Label. This is a delicious champagne. Wine Spectator describes it this way.  "Bright and lightly toasty, this elegant Champagne layers flavors of cassis, crushed hazelnut and lemon meringue pie on the creamy bead. Drink now through 2019."

Dianne brought an amazing bread that we enjoyed with butter and olives.

After a little puzzling came a spinach and tomato quiche with bacon, onion and cheddar muffins. I had planned to make a grapefruit salad but just never got to it.  It would have been a good addition.

We also experimented with a French red wine.

After about 5 hours of puzzling we were almost able to finish the border and some of the interior

We enjoyed tea as we began our puzzling and then stopped for butternut squash and sweet potato soup with more of Dianne's bread. 

This light wine from Larkmead is perfect for sipping and puzzling. Tocai Friulano, 2015

January 12, 2017
The weather interrupted our plans to puzzle on the 10th and then again on the 11th.  We were dumped with 18 inches or so of snow. We started with delicious orange ginger and tumeric tea then shifted to a wonderful Zinfandel from Tofanelli, 2012. Lunch consisted of a taco salad which was accompanied with Domaine Sainte-Eugenie Red Corbieres wine 2014. Puzzlers loved the zin and not so much the Corbieres. It actually tasted better after it was decanted an tasted very good with the taco salad.  The wine is a blend of Carigan (40%), Geranche Noir (30%) and Syrah (30%), three dark skinned grapes used extensively in southern France.
The taco salad was delicious.  I especially loved the salsa vinaigrette.


As you can see more puzzling to come.  The next date is January 24th.  Below is the menu.

Now to decide on the wine :). Will we finish the puzzle? Do we want to finish the puzzle?

So here is how the day unfolded. We sampled two different Pinot Noir wines one from France and one from California.  They were both delicious both very different. The one from Robert James was lighter and fruitier. The one from France was a little deeper and earthier.

The Pinot Noir wine paired well with the amazing sour dough bread from Dianne, a lemon and rosemary boule. The grapefruit and orange salad was delicious as were the baked eggs and leeks.  It was so cool to make this in a crock pot.

As you can see the puzzling continues. I could not imagine a more fun winter afternoon. Thanks Jan and Dianne!

January 31, 2017
Onward we go. The plan is to celebrate the last day of January with another day of puzzling. I am making a crustless quiche, Dianne is bringing more of her amazing bread and Jan is making a Zest Lime and Ginger Fruit Salad with orange, kiwi and pineapple. In addition, we will be sampling some of these wines. I am starting my WSET study and these are the wines for week one. The Reisling and Beaujolais should pair well with the quiche.

The Beaujolais WAS a perfect pairing with the quiche, my favorite of the two. Jan's Lime Ginger Fruit Salad was to die for. Again, amazing bread from Dianne.  This is by far my favorite day of the week, puzzle day. Below is our progress.
We really do puzzle, or at least Dianne and Jan do.  Here are the puzzlers in action.


I am speculating that the puzzle will be complete on February 6th  The wine and food focus is on Italian.  How fitting as the puzzle is of Cinque Terre Italy.

After wonderful wine and food and great puzzling 246 pieces still remain. YES!! one more crack at the puzzle!
It was so much fun sampling the wine with the various cheeses supplied by Jan.

Provolone
Pecorino
Gorganzola. paired very well with the Moscato

Of this array of wines we experiments with the Moscato, the Barolo, Soave and Amarone.  The Amarone was by far my favorite.

Diane made amazing focaccia bread which we had with Tucan Harvest soup. Jan brought some delicious deserts.

Dianne brought  variety of Spanish cheeses while visiting her sister in St. Petersburg FL.  They were delicious:

  • Ombra and Garotxa from Catalonia, Spain and 
  • Omorro from Azores, Spain. 
  • Manchego cheese

Menu - Puzzling with Friends in January

Thanks to the collaborators on this menu: Chef Patrick Moran, Katey Kinealy (Dailey), Katlyn Rodriguez and Sommilier, Claire Dailey.  The wines paired beautifully with the food.



First wine: 728 Bubbles from Fiddlehead Cellars, 2012
  • Truffle popcorn
  • Cheese crusted olive balls.  (Note: not a winner.)
  • Apple and pear slices. (NOTE: Forgot to prepare.)
Second wine:  Hungarian dry white: Pannonhalin Apatsagi 2009 Tramini
  • Butternut squash soup. Served with a drizzle of aged balsamic vinegar and toasted pumkin seeds.
  • Lentil salad




Third wine: French, Campuget Syrah, 2012
Fourth wine: Prager Royal Escort Port, 2010

NOTE:
Used a bamboo steamer to cook the squash





As a result the squash turned out to be a beautiful color.

Christmas Eve Tapas menu, 2014

Claire, Mike and I had so much fun celebrating Christmas with Jan and Mike Pitzo!

Some old favorites made it to the menu again:
  • Hot Spiced Meatballs
  • Blue Cheese Stuffed Bacon Wrapped Dates
  • Shrimp-Cilantro Lime
  • Veggies with herb dip
Some new winners:
  • Crab Cakes via chef Patrick (Thanks Pat for sharing your recipe and coaching me from afar. I hope you are with us next Christmas.) served with corn relish.
  • Fig Empanadas (Thanks Katie, for the recipe. Love, love love these)
  • Caprese skewers
  • Manchengo cheese slice topped with a doplup of Dianne's pepper jelly and an almond
  • Jan's corn and bean relish served with chips
For dessert we had my mom's  Pecan Lazers with fresh raspberries.  Absolutely delicious with White Port from Prager.

We started the night with bubbles, of course.  Mike started with Miner Wild Yeast Chardonnay.  We also served Miner Grenache and Biale Black Chicken Zin. Yum.

Thanksgiving Tapas menu, 2014

On this occasion I servd a variety of wines not so much wine pairings. The exception to that was the White Port from Prager. It was absolutely outstanding with the Pumkin Gratin. I am hoping Claire will help me with pairings for our Christmas Eve tapas event.

  • Pumpkin Gratin (thank you Ruth Reichl ;)) This will definitely be on the menu each Thanksgiving.
  • Hot Spiced Meatballs (mom's recipe) 
  • Blue Cheese Fig Wraps - I tried figs this year but am going back to dates.  I think the dates are sweeter and I love that sweet and salty combo)
  • Shrimp-Cilantro Lime (another Ruth Reichl recipe) I am going to capture this one. My new favorite way to make shrimp.  I love the sweet and spicy marinate/dip).  Excellent with a Rose. Served Revolver.
  • Guacamole with chips
  • Cheese and crackers
  • Kim brought deer sticks - a fan favorite 
  • Vanilla curd in mini fillo shells topped with whipped cream, also great with the Prager White Port. 
  • Bruschetta, French bread with basil pesto spread, a tomato slice and fresh mozzarella cheese
  • Veggies
  • Cashews 
  • We made vodka spiked cherry tomatoes and I forgot to serve them, they were great sliced in a veggie omelet. 

  A huge thank you to my friend Dianne who came over at 2:00 PM.  We had fun talking, preparing food and sampling wine.

Some items that didn't make the list but I would like to try: Candied walnuts, popcorn (suppose to be great with a Chardonnay), my brother Pat's crab cakes, pear brie and caramelized onions,  3 cheese walnut spread served with salted apple slices.

We served Miner wine: Wild Yeast Chardonnay, Odessey, and Oracle.
Conversation went well into the night with a delicious port

NOTE: I had planned more food for an evening meal.  We were still too full a tired so leftovers were perfect while watching The Hobbit.
