Ingredients
3 | Eggs |
1 C | Cooking oil |
2 C | White sugar |
1 t | Vanilla |
2 C | Shredded, raw,zucchini |
3 C | Flour |
1 t | Baking soda |
1 t | Salt |
½ t | Baking powder |
3 T | Cinnamon |
optional | Nuts Directions1. Beat the eggs. 2. Add oil, sugar, vanilla, and zucchini; mix well. 3. Add dry ingredients; mix well. 4. Pour batter into two, greased, loaf pans. 5. Bake @ 325° for 60-70 minutes. Tip: Don’t over-bake—they’re better on the moist side—although even dry, they’re great tasting! ENJOY!!! J |
