Blueberry Muffins


Recipe by Elaine Moran, from her recipe box

1¼ cup flour                                                    1 egg
¼ cup unprocessed bran                                  ½ cup milk
1/2 cup sugar                                                   ¼ cup shortening, melted (not oleo or butter)
3 tsp. baking powder                                      1 cup berries
½ tsp. Salt

Put dry ingredients in a bowl. Break egg into small bowl and beat lightly. Add milk to beaten egg. Stir. Add milk and egg to dry ingredients, then add cooled shortening. Stir. Fill muffin cups 2/3/ full. Bake at 400 degrees for 18 minutes or more if necessary. Yield 12 muffins.

I have been making this recipe for years.  I love them especially when they are hot.
