Hawaiian Banana Bread

Recipe by Elaine Moran, from her recipe box

2 cups granular sugar                                      2 ½ cups flour
1 cup shortening (I use butter)                        1 tsp. salt
6 very ripe bananas, mashed                          2 tsp. Baking soda
4 eggs, beaten

Cream sugar and shortening/butter; add eggs and mashed bananas. Sift together the dry ingredients and combine with the liquid mixture. DO NOT OVERMIX. Pour into 2 bread loaf pans and bake at 350 degrees for 45 – 50 minutes. Cool and remove from pans. This bread is always moist and delicious. It keeps well in the refrigerator or freezer.

I have been using this recipe for years and it has never failed me.  It is the only banana bread recipe that I make.
