Poor Man's Caviar

Recipe from: Karen Brzezinski

nice alternative to traditional salsa


2 c. tomatoes peeled and diced fine
2 c. blackeyed peas, cooked and drained
1 yellow bell pepper chopped fine
2 cloves garlic minced
1 onion chopped fine
2 Tbl. Fresh basil, chopped
½ c. olive oil
¼ c. red wine vinegar
juice from ½ lime
salt and pepper to taste

Mix all ingredients, Let set for 4 hours or overnight.  Serve with tortilla chips.
